Low-Cal Homemade Granola

My Daily Obsession: The “Guilt-Free” Crunch

If you know me, you know my morning doesn’t officially start until I’ve had my bowl of Greek yogurt topped with a mountain of granola. I eat it every. single. day. 😂

But let’s be real: store-bought granola is basically crumbled cookies in disguise. It’s usually loaded with oil and sugar, which makes it super calorie-dense. Since I refuse to give up my daily crunch, I headed to the NutriBakes kitchen to create a lighter, “everyday” version that hits all the right spots without the calorie hangover.

This batch is super crunchy, just the right amount of sweet, and perfectly golden. Here’s how to make your new favorite pantry staple!

The Recipe

Prep time: 10 mins | Bake time: 30 mins | Yields: Approx. 22 servings (1/4 cup each)

Ingredients:

Weighing your ingredients is the best way to get exact quantities. If you aren’t a scale-user yet, no sweat! I’ve included cup measurements in the recipe as well.

  • 360g Rolled Oats (4 cups)
  • 32g Pumpkin Seeds (1/4 cup)
  • 9g Sesame Seeds (1 tbsp)
  • 12g Chia Seeds (1 tbsp)
  • 56g Coconut Oil, melted (1/4 cup)
  • 84g Honey (1/4 cup)
  • 1g Cinnamon Powder (1/2 tsp)
  • 5g Vanilla Extract (1 tsp)
  • A good pinch of Salt
  • 12g Sweetened Shredded Coconut (approx. 2–3 tbsp) – Add after baking
  • 45g Unsweetened Dried Cranberries (1/3 cup) – Add after baking

Let’s Get Baking

  1. Prep the Station: Preheat your oven to 300°F (150°C).
  2. The Dry Mix: In a large bowl, toss together your oats, pumpkin seeds, sesame seeds, chia seeds, salt, and cinnamon.
  3. The Liquid Gold: In a small saucepan (or microwave-safe bowl), gently warm the coconut oil, honey, and vanilla until they are combined and fluid.
  4. The Marriage: Pour that liquid gold over your dry mix. Stir it well until every single oat is glistening.
  5. The Spread: Line your baking tray with parchment paper (pro tip: trim it to size for even browning!) and spread the mixture in a thin, even layer.
  6. Low & Slow: Bake for 30 minutes total. Crucial step: Stir it well at the 15-minute mark, and give it one last toss at 25 minutes. This ensures that “super crunchy” golden finish we’re after!
  7. The Final Touch: Remove from the oven and let it cool completely in the tray. Once cool, stir in your shredded coconut and dried cranberries.

Nutri-Note

  • Per 1/4 cup serving: ~119 Calories.
  • Storage: Keep it in an airtight jar at room temperature for up to 2 weeks, or toss it in the freezer for up to 3 months (if it even lasts that long!).

Try it out and let me know how yours turns out in the comments! Are you a yogurt-topper or a straight-from-the-jar snacker?
